I think I speak for all of us when I say finding a new recipe that whole family will eat can be a challenge. Well I've got a new one for you today - and bonus - it's a 1 pan meal... because we barely have enough time to cook, let alone wash a bunch of dishes.
I got this recipe from a friend's mom, like 15 years ago. It's hearty, easy, and semi-healthy... well it's got meat and vegetables, so that means healthy right?
She called it Beef Italiano. It's essentially "deconstructed stuffed peppers". All the ingredients can be stored in the pantry or freezer, so it's something you can usually throw together on one of those nights when you can't think of what to make.
So here's the recipe:
Ingredients:
1 lb ground beef
1 green pepper, diced
1/2 onion, chopped
1 can diced tomatoes
1 can beef broth
1/2 teaspoon salt
1 teaspoon basil
1/4 teaspoon pepper
1/2 teaspoon oregano
1 and 1/2 cup minute rice, uncooked
Steps:
Brown and drain the hamburger. Add onions and peppers, let cook for a few minutes, stirring frequently. Add seasonings and tomatoes, stir to combine. Next, add the beef broth and bring to boil. Once boiling, add rice, cover, and remove from heat. Wait 5 minutes for rice to become tender. Serve. (salt to taste)
And voila, dinner is served! One tip: I love growing a few bell pepper plants in the summer. When we have extra, I cut them up and put in a freezer bag to use in meals like this throughout the year! I keep a quart bag of diced peppers, and another quart bag of sliced peppers, which I use for fajitas. This way, the only perishable item in this meal is onions, and they are a pantry staple in our house.
